A quessadilla but with no queso? idk what to name it so here you go.
Prep time: 10 minutes Cooking time: 5 minutes
Ingredients for the wrap
1 egg
1 carrot, grated
1/2 sweet potato, grated
Ingredients for the stuffing
I mean you can put basically anything into it lol, this is what i did
1 tbsp greek yogurt
1 tbsp hummus
1 Tomato, diced
1/2 of a tofu brick, diced
some cucumber, diced
A handfull of salad leaves
Steps
Make the wrap batter:
combine the grated carrot, sweet potato and egg in one bowl and season it with salt and pepper
Fry the wrap:
Pour the batter onto a hot pan and spread it all around to form a circle. Fry it for about a minute on each side, or until you see it browning.
Prepare the vegedilla: Spread white yogurt and hummus on the whole wrap then put all the vegetables and tofu on ONE HALF of the wrap (because you need to close it lol).
Finishing steps: Close the veggedilla and top it with some fresh herbs if you’d like. Enjoy!!!
