This is a high protein pancake bread, that fills you up for a long time, and feels very satisfying, you can also make it into a portable glass container (oven-safe) and take it to work. This should be an okay portion for a sweet lunch (but of course you’re always gonna want more, because of how good it is).
Cooking time: 25 minutes
Ingredients
- 1 Egg
- 60g Plain greek yogurt
- 20g Chicory syrup
- 40g All-purpose flour
- 1/2 tsp Baking powder
- Frozen berries (or fresh if you have some)
Steps
Preheat oven Preheat your oven to 180˚C.
Whisk egg:
In a medium bowl, whisk the egg until it’s a bit frothy/paleAdd in the rest of the wet ingredients:
Add the yogurt and chicory syrup and combine.Add the dry:
Fold in flour and baking powder. Mix just until the flour dissapears, dont overmix or you’ll end up with a brick.Berries Pour the batter into a greased oven-safe container and drop your berries on top.
Bake Bake for 20-35 minutes, or until the center is firm and a toothpick comes out without raw batter (might have berry juice on it).
