Forget everything i said about irish soda bread being my favorite… The Irish aren’t ready for actual flavor.
Cooking time: ~60 minutes
Ingredients for 1 tray
- 225g All-Purpose Flour
- 100g Spelt Flour
- 20g chicory syrup
- 5g Baking Powder (1 tsp)
- 4g Baking Soda (½ tsp)
- Pinch of Salt
- 5g Ground Cinnamon (2 tsp)
- 360g Mashed Ripe Banana (about 3 medium bananas)
- 100ml Plant-Based Milk
- 50ml olive oil
- 1/3 lemon, juiced
- 5ml Vanilla Extract (optional)
- 60g Chopped Walnuts (optional)
- 120g Banana for decoration, sliced lengthways (optional)
Steps
- Mash the bananas in a bowl until smooth.
- Mix the banans with the remaining wet ingredients (milk, syrup, oil, lemon juice, vanilla).
- Add the dry ingredients (flours, baking powder, baking soda, salt, cinnamon) to the wet mixture and stir until just combined. Do not overmix.
- If using, fold in the chopped nuts.
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- Pour the batter into the prepared tray and smooth the top.
- If desired, place banana slices on top for decoration.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
